To accompany my Carrot-Sweet Potato Soup with Bacon and use up that other perennial vegetable--the celery--I concocted this simple salad inspired by the classic snack of celery sticks with peanut butter.
Celery and Peanut Salad
2 cups of celery (about 4 stalks), sliced at an angle into 1/8-inch thick pieces
6-8 mint leaves, roughly torn
1 tbsp. extra-virgin olive oil
1 tbsp. white wine vinegar
1/2 tbsp. honey
Salt, to taste
1/4 cup chopped unsalted peanuts
Combine celery and mint in a medium bowl. Whisk together oil, vinegar, honey and salt. Pour over celery and toss to combine. Top with chopped peanuts.
Deconstructed celery and peanut butter! Brilliant. The only thing missing: raisins.
